





Located in the northeastern part of Honshu, Miyagi Prefecture,
Niizawa brewery produces sake in a rich natural environment.




“Kuranohana”, sake rice nurtured
by rich soil and water.
The EiKYU uses is "Kuranohana" rice (translates to "flower of the brewery") locally grown from Miyagi Prefecture. Compared to other sake rice varieties, Kuranohana has larger and harder grains that are less prone to cracking, allowing for extreme polishing. Its low amino acid content and low protein content produce a clean, crisp flavor without impurities.






Preserving the natural environment
around the brewery maintains water quality.
Niizawa brewery is located in Kawasaki Town, Miyagi Prefecture, blessed with subterranean water from the Zao mountain range. THE EiKYU is brewed with this natural underground water. The soft water quality allows for gentle fermentation of the mash, resulting in a delicate and soft flavor. To maintain good water quality, the land surrounding the brewery is environmentally protected.
